Ultimate Girlie Rainbow Cake


This was my first attempt at making a cake that was not square and in a 9x11 pan. It was also my first try at a cake not from a box. It had it's highs and it's lows but the end product was totally worth it. The rainbow effect was amazingly easy, the frosting so-so, the castle towers were...interesting at times, and the decorating helped pull it all together. My sister and I joked that we were ready for The Food Network Challenge. We also made jokes about the unfinished towers. (I will let you see and make your own jokes)

Sub Rolls

The other day I made some killer meatballs (recipe to come later). I made a huge batch so we would have leftovers for meatball subs. Since I had Monday off I knew I wanted to bake something special for Rich when he got home from work. Those meatballs were calling from the fridge so I did a little research for the perfect roll recipe. I think I found it!

*The* Chocolate Chip Cookie

I know, another cookie recipe...but remember, when I started this journey I was a true rookie. I had had success with one cookie so I stuck to what I knew I could do. This recipe turned out to be my favorite cookie recipe ever! When they are done they look like something you should package and sell. Some of the comments they received were "Amy, where did you buy these?" and "These are better than Wegman's and they make the best!" So really give these a try!

Snickerdandies

My husband's (love that word!) favorite cookie is the snickerdoodle so I set out to find the perfect recipe for  them. I knew that in order to really fall in love with baking I would need to see people getting enjoyment from the end product. My last baking escapade ended with 5 loaves of inedible fruit loaves and years of jeering from my uncles! I wanted a "tried and true" recipe that had basic ingredients and was not extremely complicated for my baking impaired brain.

Getting Started...


After wedding blues...They are real and I had them bad! I had just spent a year planning the wedding of my dreams and relaxing for a week on the beach with my new husband and *poof* it was all over! We got back from Mexico, Rich went back to work and I was stuck at home waiting for school to start. I was depressed and didn't know what to do with myself now that there were no flowers to order, dresses to try on, invites to send, RSVP's to count, or seating charts to make.
